To parry in Hyrule Warriors: Age of Calamity, you have to play as a character that can parry, such as Link. As you play as Link, hold the Block button, which is LZ, and then press Y, the weak attack button, to parry. This will deflect attacks and beams if the timing is perfect.
For those not sure what parrying is, it basically deflects oncoming attacks and leaves the attacker vulnerable for a few seconds, where you can attack them without reprise.
